Italian Happy Meal

Image
I have a cousin  (in my age group) who lives in another State, where the lock down rules are stricter and wiser than those in sunny and stupid Florida. My cousin, who like me lives alone,  had a "down" day earlier this week.  ( I understand, it happens to me too). My cousin's neighbour aware of the down day,  designed, cooked, and brought her what I call an "Italian Happy Meal". Wowee.  What a boost to my cousin's spirits, not only because the food is good and the arrangement is witty;  but because it was a sacrament of care from a next door neighbour!

21st May 2020 - at the Bayfront, and in the Kitchen.

I see this Yacht in the mooring friend every morning.  I like the colour of the hull. Another shot with some kind of boat in the foreground. My photo' was a bit out of focus, so I redeemed it by using a ZEKE filter. Another pic of the handsome-hulled Yacht. Old Sol joined in the act as he rose behind the high rises on the east side of Bayfront Drive. Old Sol's magic 2 Old Sol's magic 3 Back at home I made a Blackberry and Apple Cobbler, some for me and some to share. And for lunch fish cakes, which somewhat fell apart in the skillet, but tasted GREAT. 1/2 lb white potatoes. 6/10th lb of flounder. Fish and potato cooked, then mashed together. One egg added for binding. A few shakes of chipotle red pepper added for seasoning. Note to self.  Next time add two eggs, or Elmer's glue, for better binding.  😷

He's a Good Lad

When we get to one or other of the parks he will not get out of the car until I am holding the leash. Safety first? But he will jump out as soon as we are in my car port.  He seems to know that it's a safe place. Safely back at home he relaxes in the hall way, with the light from the kitchen making him look so lovely Which he is!

PLEASURE POSTPONED from Sep to March.

My plan was to fly to the U.K. in September 2020 to be with my family; and especially  to be present at a big party to celebrate the civil marriage of my nephew Dan and his fiance Christine at which I would offer prayer for the blessing of their union. COVID 19 intervened .  The Hotel venue (in the Bristol U.K. area) for their party could not guaranty that they would be back in business in September. So Dan and Christine will proceed with the civil ceremony, but postpone the big party until March 2021. I had flight reservations for Sep 2020 with Delta. I called them last week to change my flight reservation from Sep 2020 until March 2021. My first call was not helpful.   The auto reply system told me that the "wait time" was four hours!; but if I called in the wee hours it might be shorter. So I called again the next morning at 3:30 a,m.  The announced wait time was 53 minutes, but it was 100 minutes before an agent responded ( thank goodness for speaker phone

Of Parsnips and Cauliflower

Image
Covid 19 days have pushed me into a cooking spree.    So today I roasted some Parsnips; and prepared and cooked Cauliflower Cheese.   Some for me, and some for an older friend who is on double lock down -  partly because of the virus; and partly because she took a tumble and broke her left wrist. Roasted Parsnips.   I ate those which were overcooked  ( I am a man who will eat burned toast!) and gave the good ones to my friend. And the celebrated (by me!)   Cauliflower Cheese. Until about six years ago I had never heard the word roux , let alone knowing what it was. I made one yesterday, using my mother's tried and tested cooking method -  to guess the amount and proportion of the ingredients, in this case flour and butter.  No recipe book for me sir! I added some milk, and as it thickened, tossed in some store bought grated cheese  (sharp cheddar).   There was also a secret ingredient -  little pieces of crispy bacon. My broke

In The Immortal Words of My Friend John C. I DON'T CARE!

Of course I should be King of the Road. As such I resent the limits placed by Governments on my liberty and freedom. I will drive as fast as I wish. Stop signs are for wimps. Traffic lights do nothing better than to slow me down. I will drive as fast as I can, ignoring these fuss-pot impediments to  MY PERSONAL FREEDOM. BUT WAIT   "Aren't you in danger of causing death or injury to yourself, or to others? I don't care.
